A prickly pear salad recipe worth trying

This salad is an amazing way to start off your spring, not only is it healthy but it also tastes very refreshing. Other than that, this salad screams NOÉ Skincare since it has a lot of our spotlight ingredients.

The main ingredient being the prickly pear of course, which is incorporated into all of our products, giving your skin the vitamin E that it needs for it to be protected from UV rays. Then there is the olive oil which is derived from olives that are also included into our skincare, to help moisturize your skin. And lastly there is the coconut nectar, which is made from the sap of the coconut palm trees that produce us with the coconuts to make our glycerin.



1. To start off this salad you will first have to turn your zucchini into long strands, using a spiralizer. The best way to cut your prickly pear is to first, using a small sharp knife, cut off both ends of the fruit and make a vertical cut in the thick skin from top to bottom. This way you can peel off the skin easily and chop the fruit up into wedges. Set the sliced fruit aside in a big bowl.

2. In a small bowl whisk together the shallot, lemon juice, lemon zest, olive oil, coconut nectar, vinegar, salt and pepper. Toss this in with the fruits you just set aside. And top it off with some cut up figs and chopped walnuts.

Chef’s tip: To get more vitamins and nutrients out of this salad you can always sprinkle some delicious sunflower seeds on top. For something so tiny they sure pack a punch, some vitamins and nutrients that sunflowers contain are vitamin E, vitamin B-3, protein, fiber and iron.
